Chocolate Chip Breakfast Biscuits

Once upon a time, Kelsie came across a really grotesque recipe for chocolate chip cookies. This recipe, in all its artery-clogging glory, contained gads of sugar, oodles of oils, and just a freaking ton of other horrifying ingredients that should never come near the human body.

Kelsie, being a total wizard (Gryffindor) in the kitchen, decided to wave her magic wand (11 inches, dragon heartstring, firm yet yielding) and give this recipe a complete makeover.

In other words, Kelsie replaced almost every single ingredient with a healthier ingredient, and, violá! These Chocolate Chip Breakfast Biscuits were born.

Sure beats Cocoa Puffs... (Please don't sue me, General Mills).


Ingredients:


DRY
1 cup soy flour ($3 @ HyVee)
1 cup oats, food processed/blended to flour
1 cup oats
1 cup raw almonds, finely chopped/food processed
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon (or more, if you like)
1 cup chocolate chips (I used dairy-free: keep in mind, dark chocolate is healthier than regular!)

WET
1/3 cup coconut oil
1/3 cup peanut butter (no added sugar/salt/oil, if you can!)
1/3 cup applesauce
2 tsp. vanilla
1/4-1/3 cup agave nectar
2 eggs


Method:

  1. Preheat oven to 325 degrees.
  2. Mix dry ingredients together (except for chocolate chips), in a bowl.
  3. Use mixer to combine wet ingredients until well blended (may be some chunks of coconut oil).
  4. 1/2 cup at a time, add dry ingredients to wet ingredients while mixing on a low speed.
  5. Once fully combined, mix in chocolate chips. I used my hands rather than the mixer.
  6. Drop onto lightly greased baking sheet in spoonfuls/handfuls.
  7. Bake for 10-11 minutes, until slightly browned along edges.

Nutty, crunchy, chewy, chocolatey goodness...





















Baker's Notes:

* This batter is very sticky! If mixing becomes too difficult, knead it with your hands (clean hands... preferably).

* Biscuits don't rise or melt in oven, so the shape you make them into will be their shape coming out (mine are haphazard-looking and I like it!).

* These are FILLING! Depending on the size, 2-3 would make a wonderful breakfast or snack.
